Deepawali is the festival of light, new hopes, and celebrations. It is, of course, the favorite and most awaited time of the year for most of us. In a country like India, no festival is completed without scrumptious delicacies.

Be it savor snacks, main courses or desserts, they gear up zeal and excitement of every celebration.
With Diwali on its way, here is the list of such delectable and healthy dishes, from starters to lip-smacking desserts.

1] Spinach Paneer Cutlet

Servings-4

Ingredients

  • Paneer- 250 gram, grated
  • Spinach- 1 bundle, blanched and drained
  • Ginger- finely chopped, 1 tbsp
  • Garlic paste- 1 tsp
  • Green chilies- finely chopped, 1 Tsp
  • Coriander powder– 1 tbsp
  • Cumin seed powder- 1 Tsp
  • Boiled potato-1, small
  • Suji- 4 tbsp
  • Salt- to taste
  • Onion- finely chopped, 1 small
  • Oil- 2 tbsp

Method of Preparation

  1. In a pan, add 1 tbsp of oil and add ginger, garlic and green chilies and saute for few seconds.
  2. Now, add finely chopped and blanched spinach with spices and heat till the spinach is cooked well.
  3. Take out the ingredients off the pan in a bowl and add grated paneer with boiled potatoes.
  4. Divide the mixture into equal small balls in tikki form.
  5. Drizzle oil onto a pan and shallow fry the cutlets till crispy brown on both sides.
  6. Hot and crunchy cutlets are ready to serve with ketchup or green chutney.

2] Baked Mathri

Servings– 4-6

Ingredients

  • Whole wheat flour- 1 cup
  • Semolina- ½ cup
  • Kasuri methi- 2 tbsp
  • Cracked pepper- 1 tsp
  • Cumin powder- 1 tsp
  • Ghee- ¼ cup
  • Salt- to taste

Method of Preparation

  1. Add all the dry ingredients in a bowl.
  2. Now, add ghee and mix well till it imparts the crumbled, sandy texture.
  3. Afterwards, slowly add water and knead until it makes a soft dough.
  4. Preheat the oven at 180℃.
  5. Divide the dough and spread the dough into a sheet. Shape them into any desired pattern.
  6. Place onto a baking tray and sprinkle any herb (as per preference) and place in the oven for 5-7 minutes.
  7. Flip in between and bake for another 7-8 minutes.
  8. Once baked, take it out and let it cool. After that, it can be stored in airtight containers.

3] Dal Dhokla

Servings-4

Ingredients-

  • Moong dal– without skin, ½ cup
  • Chana dal- without skin, ½ cup
  • Masoor dal– ½ cup
  • Curd- ½ cup
  • Asafoetida- ¼ tsp
  • Turmeric powder- ½ tsp
  • Ginger paste- ½ tsp
  • Mustard seeds- 1 tsp
  • Green chillies- 3-4, slit and halved
  • Salt- to taste
  • Oil- 2 tsp

Method of Preparation

  1. Soak all the dals for at least 4-5 hours or overnight.
  2. Place them together in a grinder and grind till a thick paste is obtained.
  3. In a large bowl, mix the dal paste with turmeric powder, asafoetida, curd, and salt.
  4. Oil the dhokla stand or tin trays and pour the batter and keep into the steamer with the lid closed.
  5. Let it steam for 10 minutes on high heat flame.
  6. After 10 minutes, take out the tray and let it cool.
  7. Cut it into any desired shape and garnish it with the tempering of mustard seeds and green chilies.
  8. Serve dal dhokla hot with green chutney.

4] Paneer Curry with Hung Curd Gravy

Servings– 4

Ingredients

  • Paneer- 500 gram, cubed and shallow fried till light brown
  • Ginger paste- 1 tsp
  • Garlic paste- 1 tsp
  • Green chilies- 3-4, slit
  • Hung curd- ½ cup
  • Turmeric powder– 1 Tsp
  • Coriander powder- ½ tsp
  • Garam masala- ½ tsp
  • Cumin seeds- 1 tsp
  • Oil- 1 tbsp
  • Salt- to taste
  • Bay leaves- 2

Method of Preparation

  1. Heat the oil in a pan and add bay leaves with cumin seeds.
  2. Now, add ginger and garlic paste and saute till they are golden brown.
  3. Once they are cooked, add all the spices, hung curd and green chilies.
  4. Stir fry them till they are cooked.
  5. Once the fat separation occurs, now add fried paneer and cook on medium heat for 10-12 minutes.
  6. Piping hot and creamy curry is ready to serve with tandoori roti or naan for best taste.

5] Baked Mixed Dal Kachori

Servings- 4

Ingredients

  • Whole wheat flour- 2 ½ cups
  • Besan- 1 cup
  • Suji- 3 tbsp
  • Salt- as per taste
  • Urad dal- ½ cup
  • Moong dal- 1 cup
  • Chana dal- ½ cup
  • Ginger- ½ tsp, finely chopped
  • Garlic- ½ tsp, crushed
  • Cumin seeds- ½ tsp
  • Hing powder- a pinch
  • Saunf- ½ tsp
  • Coriander powder- ½ tsp
  • Garam masala- ½ tsp
  • Oil- For dough formation and baking

Method of Preparation

  1. Mix whole wheat flour, besan, suji and oil in a bowl. Add water and make dough out of it.
  2. Keep it aside and let it rest for some time.
  3. Preheat the oven at 180℃.
  4. Soak dals overnight and put it in the blender with ginger, garlic, cumin seeds, Hing, coriander powder, garam masala, and salt. Blend till it becomes a coarse paste.
  5. Now, add 2 tsp oil in a pan and put dal paste into it. Roast till it becomes golden brown.  Set it aside to cool.
  6. Now, put small balls from the dough and put dal filling into it. Flatten it with rolling pin.
  7. Grease the baking tray with oil, place the kachoris over the tray and brush them with oil. Place it in the oven at 200℃ and bake about 10-15 minutes. Check in between till it becomes golden brown.
  8. Hot and scrumptious kachoris are ready to eat with green chutney or aloo ki bhaji.

6] Kesar Lassi

Servings– 4

Ingredients

  • Yogurt- 3 cups
  • Warm milk- ½ cup
  • Saffron- few strands
  • Powdered sugar- 4 tbsp
  • Cardamon powder- a pinch
  • Almonds- 10-12, finely chopped
  • Pistachios– 10-12, finely chopped

Method of Preparation

  1. Soak the saffron strands in 1 tablespoon of warm milk and keep aside.
  2. Mix yogurt, milk, sugar, and cardamom powder together in a blender and blend little.
  3. Now, add the saffron milk and ice cubes and blend some well.
  4. Pour chilled in glasses and garnish it with slivered almonds and pistachios.
  5. Sweet Kesar lassi is ready to relish.

7] Multigrain Laddoos

Servings- 4

Ingredients

  • Ragi flour- ½ cup
  • Bajra flour- ¼ cup
  • Whole wheat flour- ½ cup
  • Besan- ¼ cup
  • Flaxseeds– ¼ cup
  • Sesame seeds- ¼ cup
  • Jaggery- ½ cup
  • Desi ghee- 2 tbsp
  • Cardamom powder- ½ tsp
  • Roasted almonds- 10-12, coarsely chopped

Method of Preparation

  1. Heat ghee in a heavy-bottomed pan and roast all the flours with proper mixing. Stir occasionally till it turns light brown with the aroma.
  2. Melt jaggery with water in a pan. You can filter it as well to remove impurities if any.
  3. Boil the jaggery syrup till it gets a thick consistency. For that, in a bowl, take water and dip a few drops of syrup. If on cooling, it forms a softball, the syrup is ready.
  4. Now, mix flour into the syrup little by little and mix rapidly till no lumps are left.
  5. Add nuts to the mixture.
  6. Make laddoo sized balls as per the desired size while it is hot.
  7. Store it in air-tight containers.
