Bottle Gourd Peel Chutney Recipe
Bottle gourd boasts of numerous health benefits. It is a rich source of Calcium, Vitamin K and C and helps reducing cholesterol and sugar levels.
As much as enjoying the fleshy parts of the vegetables, one should also make it a point to include the skin once in a while. Vegetable skin is loaded with insoluble fibre and it benefits the body in a number of ways. For instance, bottle gourd peel cleanses your stomach.
Here we share with you a simple bottle gourd peel chutney recipe. This chutney goes well with dosas, idlis, rotis and even curd rice.
This chutney can be done using different peels of vegetables or mixed peels of vegetables as well.

- 1 cup Bottle Gourd peel cleaned
- 1 tbsp Green Chilli
- 3 clove Garlic
- 1 tsp Cumin
- 20 gm Tamarind
- 1 pinch Turmeric
- 1 pinch Asafoetida
- 2-3 piece inner flesh of Bottle Gourd (optional)
- 1 slice Ginger (optional)
- Few Curry Leaves (For tempering)
- 1 tsp Urad dal (For tempering)
- 1 tsp Mustard seeds (For tempering)
- 2 Red chilies (For tempering)
- 1 tsp Oil (For tempering)

Wash the bottle gourd, peel it and then cut the gourd into small pieces. Don’t throw the peels away!

Add oil in a hot pan. Add bottle gourd peels, some flesh parts of bottle gourd, garlic, cumin seeds, turmeric, asafoetida and salt

Let it cook for 5 minutes on low flame until it becomes soft. Close the pan with lid.

After it becomes soft let it cool and then transfer it to the blender. Blend it nicely.

For tempering: Add oil in the same pan and add urad dal, mustard seeds, curry leaves and red chillies in the oil. Stir until the colour changes and then switch off the flame. Add this tempering to the chutney and mix well.
